Damn that sucks, I hope I did not miss out on a potential fix
My topology is like this:
Here's a picture of my rack, from behind. (The (blue) CAT8 cable from the AQC113CS interface to the SFP+ module is not in contact with any other cables)
Here's a screenshot of a iperf test i did.

After 2 minutes it starts disconnecting the interface. (Same thing happens on Windows with the newest drivers).
You should only pay attention to the last 6 lines of output of dmesg in the upper right corner.
The other entries are old and is me swapping cables around and not related to the test.
It keeps flapping up and down between 10Gigabit and 0.
We can also see on the network interface sensor that it is running at 62C when it starts dropping.
This is the highest temperature I've ever seen it go.
On the switch side I only have 40C on the SFP+ module and 38C on the CPU. (I have added case fans to the switch which helps tremendously for this model)
I don't think the temperature on either side is the problem.
When using the Intel 2.5G NIC with the same cables and SFP+ module, I can run iperf tests indefinitely and not have any packet loss.

are you sure its not the sfp+ module its linked to i had a problem with one of my modules that i had to heatsink ontop of the sfp+ cages to disipate into the switch shell
i confirmed it by using a low power 80m module that was fine
also worth trying a 2m cable one of my switches doesnt like 0.5m cables much for some reason
though i doubt this is anything to do with it but i would still rule it out

No I am not sure that it's not the SFP+ module.
This SFP+ module is brand new. I received it three days ago and I chose it because it was "best in test" by servethehome .
But like I said, if I use the 2.5G Intel port on the motherboard, along with this module, there is never any loss, no matter how long I use it, or run iperf stress tests.
On the other hand, the AQC113C runs perfectly stable at 1G when plugged into a normal RJ45 port in the switch.
I just did a test where I circumvented the switch and plugged the Wiitek SFP+ module directly into the Intel X520-DA2 on the other server and connected it with a CAT6 cable to my ProArt X870E 10G AQC113C Onboard NIC.
Then I added both interfaces to a new network and started an iperf test.
The connection started dropping again after only 90 seconds.
I think we can now we can rule out the switch as being the culprit.
Unfortunately I don't have any other 10G modules or gear that I can test with. But I could order another model or brand from Amazon and return it if doesn't help.
Do you have any suggestions for another module?

Put a large fan directly blowing onto the SFP+ to RJ45 Module and see if it lasts longer
give it a bit to cool down before starting iperf3
also when you run the module at 2.5g it uses like 25-30% of the power (e.g with the i225/i226 connected) so it wont overheat
you can force the aqc113c to 2.5g to test
that review is from 2020 btw alot has changed with SFP+ to RJ45 since then
modules can use like 1.65w now instead of like 4w

I think i paid £27 for it last year when it was on offer just make sure you select 80M not 30M
there's a £3 code to use on aliexpress atm on over £29
give it a bit to cool down before starting iperf3
